This convenient salad is such an easy go-to when you’re after a quick throw together meal or side. Perfect to serve next to your favourite protein on a plate, or toss it in a bowl and enjoy a quick Buddha!

Prep: 5 min | Cook: 2 min | Serves: 4

Kaleslaw Grain Salad

Stage 1:

  • 350g Woolworths Kaleslaw Salad Kit

  • ½ cup frozen corn kernels

  • ½ large avocado, diced

  • ⅓ cup pepitas

  • ⅓ cup crumbled feta

Stage 2:

  • 250g brown rice microwaveable pouch

01 Empty salad kit contents into a large bowl. Remove seed and dressing packet from mix and retain for later. Add all remaining stage 1 ingredients and toss to combine.

02 Microwave rice according to packet directions. Add rice, seeds and desired amount of dressing to salad. Season and toss to combine. Serve as a side to your favourite main dish.

Dietaries:

For an egg free option, use an alternative dressing. For an dairy free and vegan option, omit the dressing and feta.
