Antipasto Pasta Salad

Such a wonderful side dish, lunchbox filler or lunch option that’s ready in 10 minutes!

Prep: 10 min | Cook: 10 min | Serves: 6

Antipasto Pasta Salad

Stage 1:

  • 500g pasta spirals

  • 1 red onion, finely chopped

  • 1 tsp minced garlic

  • 15 black pitted olives, sliced

  • 100g feta, crumbled

  • 15 sundried tomatoes, finely chopped

  • 2 large handfuls (60g) baby spinach leaves

Stage 2:

  • 350g jar Leggo's Stir Through Sauce Roasted Vegetables

01 Cook pasta according to packet instructions.

02 Prepare remaining stage 1 ingredients and set aside.

03 Drain pasta and add to a salad bowl. Add all remaining ingredients and toss to combine.

Dietaries:

For an gluten free option, use a gluten free pasta.
