Antipasto Pasta Salad
Such a wonderful side dish, lunchbox filler or lunch option that’s ready in 10 minutes!

Antipasto Pasta Salad
Stage 1:
500g pasta spirals
1 red onion, finely chopped
1 tsp minced garlic
15 black pitted olives, sliced
100g feta, crumbled
15 sundried tomatoes, finely chopped
2 large handfuls (60g) baby spinach leaves
Stage 2:
350g jar Leggo's Stir Through Sauce Roasted Vegetables
01 Cook pasta according to packet instructions.
02 Prepare remaining stage 1 ingredients and set aside.
03 Drain pasta and add to a salad bowl. Add all remaining ingredients and toss to combine.
Dietaries:
For an gluten free option, use a gluten free pasta.
