Whole Roasted Cauliflower with Yoghurt Pesto Dressing

This is such an impressive dish (perfect for entertaining) and relatively simple. Pour the dressing over the roasted cauliflower and dig in with a big spoon!

Whole Roasted Cauliflower with Yoghurt Pesto Dressing

  • 1 large whole cauliflower

  • ¼ cup olive oil

  • 1 cup Greek yoghurt

  • ½ cup basil pesto dip

  • 1 tbsp honey

  • 1 tbsp cumin

01 Preheat oven to 240°C.

02 Remove enough of the stem and leaves from the cauliflower so it sits flat.

03 Submerge cauliflower in a large pot of water. Bring to the boil and cook, covered, for 20 minutes or until slightly softened.

04 Gently lift cauliflower out of pot and place on a lined tray. Drizzle with oil and season. Bake for 30 minutes or until tender and dark brown on top.

05 In a small bowl, whisk yoghurt, pesto, honey and cumin together. Gently place cooked cauliflower on a dish and pour dressing over. Serve as a side.
