Up ‘n Go Cookies
These soft and chewy cookies are made with Weetbix and delicious whole food ingredients, so you can feel good about eating these on the run in the mornings. They also make for fantastic snacks and are prepared in 1 bowl in just 10 minutes.

Up ‘n Go Cookies
Stage 1:
1 cup ripe mashed banana
⅓ cup peanut butter
3 Weetbix, finely broken up
⅓ cup honey or maple syrup
1 tsp cinnamon
½ tsp salt
½ tsp ground ginger
Stage 2:
½ cup almonds
½ cup wholemeal self raising flour
10 banana slices, to top cookies
01 Preheat oven to 160°C.
02 Place stage 1 ingredients in a food processor and process until combined. Add almonds and pulse until partially broken. Remove blade and stir in flour.
03 Drop the sticky dough into 10 equal mounds on a lined baking tray. Press a banana slice on top of each cookie. Cook for 20 minutes.
Store: In an air tight container in the fridge for up to 3 days or freeze for months.
