Muesli Cookies
There is just so much to love about these cookies. Not only are they made in 1 bowl, but they're also nut free, dairy free, refined sugar free, vegan, egg free and you can freeze them!

Muesli Cookies
Dry:
2 cup rolled oats
1 cup wholemeal plain flour
1 cup grated carrot
½ cup pepitas
½ cup currants
½ tsp bicarb soda
Wet:
½ cup maple syrup
½ cup tahini or peanut butter
½ cup water
01 Preheat oven to 160°C.
02 Combine all dry ingredients in a mixing bowl.
03 In a separate bowl combine wet ingredients.
04 Add wet mixture to dry and stir to combine.
05 Gently roll the dough into 15 balls and place onto a lined tray. Flatten slightly with fingers and cook for 20 minutes.
Store: In a container in the pantry for up to 3 days, or freeze them for months.
