Pink Surprise Pancakes

These soft, fluffy pancakes are naturally sweetened and awaiting your favourite toppings! Freeze leftovers (if there are any!). They make great snacks and lunchbox fillers.

Pink Surprise Pancakes

Stage 1:

  • 1 cup milk

  • 1 ripe banana

  • 1 tbsp honey

  • 1 cup Greek yoghurt

  • 1 egg

  • 1 cup raspberries

Stage 2:

  • 1 cup desiccated coconut

  • 1½ cups wholemeal self raising flour

01 Add stage 1 ingredients to a blender and blend until smooth.

02 Pour mixture into a bowl and whisk in flour and coconut.

03 Cook ¼ cup spoonfuls of batter in a lightly greased frypan on medium high heat. Cook for 2 minutes, or until bubbles appear. Flip and cook for a further 1 minute. Serve.
