Hands down, one of my quickest recipes to prep and right up there for simplicity! Plus, you can cook them as bars too.

Prep: 5 min | Cook: 20 min | Makes: 8

Chunky Monkey Cookies

  • 1 cup very ripe banana, mashed

  • ½ cup desiccated coconut

  • ½ cup quick oats or quinoa flakes

  • ¼ cup dark chocolate chips

  • ½ tsp cinnamon

01 Preheat oven to 160°C.

02 Add all ingredients to a bowl and mix until combined.

03 Roll out 8 balls and place on a lined baking tray. Flatten with hands. Bake in the oven for 20 minutes or until golden.

Store: In an air tight container in the fridge for up to 3 days, or freeze for months.

Dietaries:

To make this recipe gluten free, use quinoa flakes.  For a dairy free and vegan option, ensure the chocolate you use is vegan.
