ANZAC Biscuits

What a joy it is to make cookies that are so SIMPLE! These are soft, subtly sweet and easy enough for kids to make. ⁠

Prep: 15 min | Cook: 20 min | Makes: 12

ANZAC Biscuits

Dry:

  • 1 cup rolled oats

  • 1 cup shredded coconut

  • 1 cup wholemeal plain flour

  • ½ tsp baking powder

Wet:

  • 75g (⅓ cup) butter, melted

  • ⅓ cup honey

  • ⅓ cup hot water

01 Preheat oven to 160°C.

02 Combine all dry ingredients in a large mixing bowl.

03 Add wet ingredients and mix until well combined.

04 Roll out 12 balls and place onto a lined tray. Flatten slightly with fingers. Cook for 20 minutes or until just golden

Store: In an air tight container in the cupboard for up to 3 days or freeze for months.
