ANZAC Biscuits
What a joy it is to make cookies that are so SIMPLE! These are soft, subtly sweet and easy enough for kids to make.

ANZAC Biscuits
Dry:
1 cup rolled oats
1 cup shredded coconut
1 cup wholemeal plain flour
½ tsp baking powder
Wet:
75g (⅓ cup) butter, melted
⅓ cup honey
⅓ cup hot water
01 Preheat oven to 160°C.
02 Combine all dry ingredients in a large mixing bowl.
03 Add wet ingredients and mix until well combined.
04 Roll out 12 balls and place onto a lined tray. Flatten slightly with fingers. Cook for 20 minutes or until just golden
Store: In an air tight container in the cupboard for up to 3 days or freeze for months.
