Let’s Party Cookies

Let’s Party Cookies
Dry:
2½ cups plain flour
1 tsp baking soda
1 tsp salt
Wet:
½ cup coconut oil
½ cup olive oil
¾ cup maple syrup
1 tsp vanilla essence
Additional:
2 eggs
Topping options: chocolate chips, sprinkles, chopped nuts, sultanas, seeds, cacao nibs
01 Preheat oven to 175°C.
02 Mix dry ingredients together in a large mixing bowl.
03 Add coconut oil to a microwave safe bowl bowl and microwave on low for 30 seconds, or until melted. Whisk in remaining wet ingredients. Allow to cool slightly. Whisk in eggs.
04 Add wet mixture to dry mixture and whisk until just combined.
05 Scoop out 24 level tablespoon domes and place onto 2 lined trays. Press toppings into tops of cookies.
06 Bake for 12 minutes or until slightly golden on edges. Remove from oven. Allow to cool on a rack.
