Almond Joy Cookies
I love a good hidden veg recipe, and this one is no exception. These soft cookies are soft in texture, nutty in flavour and an absolute joy to eat.

Almond Joy Cookies
Wet:
240g tin chickpeas, drained and rinsed
½ cup almond butter
⅓ cup maple syrup
1 tbsp coconut oil, melted
1 tbsp vanilla essence
Dry:
½ cup wholemeal self raising flour
12 almonds
01 Preheat oven to 175°C.
02 Add chickpeas to a food processor. Process briefly, stopping to scrape sides down as needed.
03 Add remaining wet ingredients and process until smooth and combined.
04 Remove blade and stir in flour until just combined.
05 Drop the sticky dough into 12 equal mounds onto a lined baking tray. Flatten slightly with wet fingers and top each with an almond. Bake for 15 minutes.
