Carrot and Blueberry Cookies

Hands down, these cookies are one of my favourite to make. They’re soft, full of texture and bursting with flavours making them very popular with the little ones!

Carrot and Blueberry Cookies

Dry:

  • 1 cup oats

  • ½ cup shredded coconut

  • 1½ cups wholemeal self raising flour

  • ¼ tsp nutmeg

  • 1 tsp cinnamon

  • ½ tsp salt

Wet:

  • cup maple syrup

  • ⅓ cup coconut oil, melted

  • ½ cup hot water

Mix Ins:

  • 1 cup grated carrots

  • 1 cup blueberries

01 Preheat oven to 160°C.

02 Combine all dry ingredients in a large mixing bowl. In a small bowl, whisk together wet ingredients.

03 Pour wet mixture into dry and mix until just combined.

04 Using your hands, mix in blueberries and grated carrot.

05 Roll 18 balls onto a lined tray and flatten with fingers. Cook for 20 minutes or until golden.

Store: In an air tight container in the fridge for up to 3 days or freeze for months.
