Carrot Cake Porridge

Throw everything into the slow cooker and let it cook overnight. You’ll wake up to an instant breakfast that tastes as good as it smells!

Prep: 15 min | Cook: 6-8 hrs | Serves: 6

Slow Cooked Carrot Cake Porridge

  • 2 medium apples, grated

  • 2 medium carrots, grated

  • ½ cup pitted dates, finely chopped

  • ½ cup walnuts, roughly chopped (optional)

  • 2 cups rolled oats

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 2 cups milk of choice

  • 2 cups water

01 Place all ingredients into a slow cooker and stir to combine. Cook on low for 6-8 hours, or overnight.

02 Serve warm into bowls, with a dash of milk or dollop of Greek yoghurt.

Store: Leftovers in an air tight container for up to 3 days.

Dietaries:

To make this recipe dairy free, use a dairy free milk such as oat milk or almond milk. To make this recipe nut free, omit the walnuts.
