Veg Loaded Tuna Mornay

This one’s great when your fridge is bare, as it uses mainly pantry and freezer staples. It’s also nice and soft in texture for the little ones!

Prep: 5 min | Cook: 15 min | Serves: 4

Veg Loaded Tuna Mornay

  • 500g spiral or penne pasta

  • 1 tbsp butter

  • 1 tbsp plain flour

  • 1 cup milk

  • 425g can tuna in spring water, undrained

  • 1 cup frozen pea, carrot and corn mix

  • 100g frozen chopped spinach

  • 410g can creamed corn

  • 1 cup tasty cheese, shredded

01 Cook pasta according to packet directions.

02 Melt butter in a medium size frypan over medium high heat. Add flour and whisk constantly, for 1 minute. Whilst whisking, slowly pour in milk. Continue to whisk for 5 minutes, or until sauce boils and thickens.

03 Reduce heat to medium low. Add remaining ingredients and cook, until heated through, stirring occasionally.

04 Drain pasta and serve with tuna mornay sauce.
