Banana Blender Pancakes

You’ve got to love a breakfast you can make in a blender! Especially when you can send the leftovers to school in the kids lunchboxes.

Banana Blender Pancakes

  • 2 medium ripe bananas

  • 2 eggs

  • ½ cup milk of choice

  • 1 tbsp honey

  • 1 tsp vanilla essence

  • 1 tsp ground cinnamon

  • 1½ cups rolled oats

  • 2 tsp baking powder

  • ¼ tsp salt

  • ¼ cup pepitas

  • ¼ cup sunflower seeds

01 Place all ingredients into a blender and blend until smooth. Let the batter sit for 5 minutes.

02 Meanwhile, bring a large frypan to medium high heat. Lightly coat the pan with butter or oil. Cook ¼ cup spoonfuls of batter for 2 minutes or until bubbles appear. Flip and cook for a further minute before serving.

Store: Leftovers in an air tight container in the fridge for up to 3 days or freeze for months.

To make this recipe dairy free, opt for dairy free milk such as oat, almond or soy.
