Fluffy Almond Pancakes

I love the texture the almond meal gives these pancakes. They’re packed with great nutrition and perfect enjoyed for breakfast or a snack on the go!

Fluffy Almond Pancakes

  • 3 small ripe bananas

  • ½ cup Greek yoghurt or coconut yoghurt

  • ¼ cup maple syrup

  • 2 eggs

  • 1 cup rolled oats

  • 1 cup almond meal

  • ⅓ cup desiccated coconut

  • 1 tsp baking powder

01 Place all ingredients into a blender and blend until well combined and smooth.

02 Meanwhile, bring a large frypan to medium high heat. Lightly coat the pan with butter or coconut oil.

03 Cook ¼ cup spoonfuls of batter for 2-3 minutes or until bubbles appear. Flip and cook for a further minute. Serve.
