One Bowl Banana Bread

A fan favourite on Instagram, this one’s winning hearts all over! Made in one bowl and nut free, it’s an easy lunchbox option you can freeze (if it doesn’t get eaten first!).

One Bowl Banana Bread

Wet:

  • 2 tbsp coconut oil, melted

  • ⅓ cup olive oil

  • ½ cup maple syrup or honey

  • 2 eggs

  • 1 cup very ripe bananas, mashed

  • ¼ cup water

  • 1 tsp vanilla extract

Dry:

  • 1¾ cups wholemeal self raising flour

  • ½ tsp salt

  • 1 tsp ground cinnamon

01 Preheat oven to 175°C.

02 Add all wet ingredients to a large bowl, whisking as you go.

03 Add dry ingredients and mix with a big spoon, until just combined.

04 Pour into a lightly greased 10cm x 20cm loaf pan tin and bake for 50 minutes. Cool in tin before turning out.

Store: In an air tight container in the pantry for up to 2 days, or freeze for months.
