Savoury Scones

A great savoury twist on a classic scone recipe. Perfect served warm with butter.

Savoury Scones

Stage 1:

  • 2 spring onions, finely sliced

  • ½ cup sun-dried tomatoes, finely chopped

  • 50g frozen spinach, defrosted

  • ⅓ cup parmesan or feta

  • 1 tsp salt

  • 1 tbsp oregano

Stage 2:

  • 1 cup sour cream

  • 1 cup soda water

  • 3 cups self raising flour + extra

01 Preheat oven to 200°C.

02 Mix stage 1 ingredients together in a large bowl.

03 Add sour cream and mix well. Add soda water and mix well.

04 Add flour and mix until just combined. Turn out onto a lightly floured bench. Knead briefly until dough comes together. Shape into a circle and press to a thickness of 2cm. Use an 6cm round cutter to cut out 17 scones.

06 Place close together on a lined baking tray and brush the tops with sun-dried tomato oil (from jar). Bake for 20 minutes, or until lightly golden.
